    Broccoli Salad

    Broccoli is such a great veggie, my garden is filled with this wonderful veggie and I use it constantly. Either boiled with fresh lemon juice (juice from my trees- big surprise) in stir fry, soups or salads. Here is my husbands favorite salad with broccoli.


    • 1 Lb broccoli florets
    • 1 Medium red onion (diced)
    • 1/2 Lb crisp chopped bacon
    • 3/4 Cup raisins
    • 1/2 Cup sliced almonds
    • 1 Cup mayonnaise - (I use Best Foods)
    • 1/2 Cup sugar
    • 2 Tbs Apple cider vinegar


    1. In a large bowl blend mayo, sugar and apple cider vinegar.
    2. Set aside and prep the veggie items
    3. Cut broccoli into bite size pieces and place into another bowl
    4. Cut up red onions and add to same bowl, next add bacon and raisins. Pour this into the bowl with dressing and blend well, until all items are lightly coated with dressing. Sprinkle almonds over salad, gently blend in almonds. Place into a container and into refrigerator. Allow to sit for 30 minutes or so. Prior to serving blend again so dressing covers all items.
    5. Dressing might pool at bottom of salad but this is not a problem, it is delicious.
