Broccoli And Cheese Soup
Ingredients
- 1 can chicken broth
- 1 c. heavy cream
- 2 c. fresh or possibly frzn broccoli
- 1 c. grated cheddar cheese
- 4 ounce cream cheese softened (half of an 8-ounce pkg) Salt to taste Freshly-grnd black pepper to taste
Directions
- First, steam or possibly cook broccoli. Put all remaining ingredients in blender (or possibly food processor) except cheddar till smooth. Add in broccoli for just a few seconds so it will be minced up very fine. (Or possibly put it all in together if you want it more pureed.)
- Pour in sauce pan, add in cheese and stir continuosly over low heat till melted.
- This recipe yields 4 servings;
