  • broccoli and cheese soup

    Ingredients

    • 20 oz margarine
    • 20 oz finely chopped onions
    • 24 oz all purpose flour
    • 2 Tbsp salt
    • 2 tspblack pepper
    • 6 oz chicken base
    • 6 quarts water
    • 3 gallons milk
    • 80 oz coarsely processed cheese
    • 8 lbs frozen cut broccoli

    Directions

    1. Melt margarine in steam-jacketed or other large kettle.
    2. Add onions and saute until tender.
    3. Add flour and seasonings - stir until blended
    4. Cook for 5 minutes - stirring often
    5. Stir in chicken base - then add water and milk - stirring constantly
    6. Reduce heat and cook until thickened - stirring often
    7. Add cheese and stir until melted
    8. Steam broccoli until just tender.
    9. Chop, if necessary and add to cheese mixture - heat to 180 F
