Broccoli And Cheese Soup

Ingredients

  • 1 can chicken broth
  • 1 c. heavy cream
  • 2 c. fresh or possibly frzn broccoli
  • 1 c. grated cheddar cheese
  • 4 ounce cream cheese softened (half of an 8-ounce pkg) Salt to taste Freshly-grnd black pepper to taste

Directions

  1. First, steam or possibly cook broccoli. Put all remaining ingredients in blender (or possibly food processor) except cheddar till smooth. Add in broccoli for just a few seconds so it will be minced up very fine. (Or possibly put it all in together if you want it more pureed.)
  2. Pour in sauce pan, add in cheese and stir continuosly over low heat till melted.
  3. This recipe yields 4 servings;
