Boone Tavern's Southern Fried Chicken
Ingredients
- 1 fryer, cut in serving pcs, skinned
- 1/2 c. pancake mix
- Salt and pepper to taste
- 1 egg, beaten
- 2 tbsp. lowfat milk
- Deep fat for frying
Directions
- Steam chicken in colander over boiling water (covered) for 20 min. Mix salt and pepper into pancake mix. Beat egg and lowfat milk together. Dip chicken in egg mix, and roll in pancake mix till well coated. Heat fat and deep fry chicken till golden.
