Blueberry Peach Muffins
Ingredients
- 3 c. flour
- 1/4 c. sugar
- 1/4 c. brown sugar
- 2 tsp baking pwdr
- 1 pch salt
- 1/4 c. melted margarine
- 5 x egg whites
- 1 c. skim lowfat milk
- 1/2 c. blueberries
- 1/2 c. fresh peaches peeled, diced
- 2 Tbsp. margarine Nutmeg to taste
Directions
- Combine flour, sugar, brown sugar, baking pwdr, and salt. In a separate bowl combine egg whites and lowfat milk. Add in to flour mix. Add in melted margarine. Stir just till blended. Mix in fruit.
- Fill paper-lined muffin tins. Bake at 400 degrees for 20 min. Brush tops lightly with margarine and sprinkle with nutmeg.
- This recipe yields 16 servings.
