Almond Peach Muffins
Ingredients
- 1 1/2 c. flour
- 1 c. sugar
- 3/4 tsp salt
- 1/2 tsp baking soda
- 2 x Large eggs
- 1/2 c. vegetable oil
- 1/2 tsp vanilla
- 1/8 tsp almond extract
- 1 1/4 c. minced peeled fresh peaches (or possibly a 16 ounce. can of peaches, liquid removed and minced)
- 1/2 c. almonds, minced
Directions
- In a large bowl combine flour, sugar, salt and baking soda. In another bowl beat Large eggs, oil and extracts; stir in dry ingredients just till moistened. Mix in peaches and almonds. Fill greased or possibly paper-lined muffin c. 3/4 full. Bake at 375 degrees F for 20-25 min.
- Yields about 12 standard size muffins.
