    Best Ever Macaroni and Cheese

    A family favorite that I've been making for 15 years.

    Ingredients

    • 5 oz Romano Cheese, shredded
    • 16 oz Cheddar Cheese, shredded
    • 8 oz Fat Free Cream Cheese
    • 24 oz Elbow Noodles
    • 5 cups fat free milk
    • 4 Tbs Corn Starch
    • 1 tsp Pepper
    • 1 tsp Salt

    Directions

    1. Bring slightly salted water to a boil
    2. Stir in noodles.
    3. Cook 8 minutes.
    4. Drain.
    5. While the noodles are cooking, put 1 cup milk and cornstarch in pot and whisk until smooth.
    6. Heat remaining milk in microwave until hot, about 3 minutes.
    7. Add milk to corn starch mixture.
    8. Stir over medium heat until simmering.
    9. Stir constantly until thickened (about 1 minute)
    10. Remove from heat.
    11. Add cream cheese, salt & pepper.
    12. Whisk until cheese melts and sauce is smooth.
    13. Heat oven to 375 degrees.
    14. Toss 1/2 cup cheddar and 4 Tbs romano in small bowl and set aside.
    15. Spray 9 x 13 baking dish with cooking spray.
    16. Add pasta and remaining cheese to sauce.
    17. Stir until blended.
    18. Transfer to baking dish.
    19. Top with cheese mixture.
    20. Bake 25 minutes.
