  • Baked Macaroni And Cheese

    Ingredients

    • 2 tsp Margarine, divided
    • 1/2 c. Minced onion
    • 1 1/2 c. Cooked macaroni
    • 3 ounce Cheddar cheese, shredded
    • 3/4 c. Evaporated skim lowfat milk
    • 1 lrg Egg
    • 1/4 tsp Salt Dash red pepper
    • 1/4 tsp Paprika

    Directions

    1. Preheat oven to 350 degrees F. In small nonstick skillet heat 1 tsp margarine till bubbly and warm. Add in onion and saute/fry till translucent/soft. (Don't brown). In bottom of 1-quart casserole spread 3/4 c. of macaroni. Top with 1- 1/2 ounce cheese, then half the sauteed onion. Repeat layers. In small bowl combine lowfat milk, egg, salt, and pepper, mixing well. Pour over macaroni mix and sprinkle with paprika. Dot with remaining margarine and bake till set, 20-25 min. Don't overcook.

      I am anxious to make this and love that this is a smaller version. I can make this in my 8x8 casserole dish or I can make it in my muffin pan as well. GOOD STUFF THANK YOU!
