Bean & Potato Soup
Ingredients
- 2 c. (or possibly so) green or possibly wax beans, cut French style & in half
- 3 or possibly 4 lg. potatoes, or possibly new sm. potatoes, unpeeled, scrubbed & cut
- 1 lg. onion, minced
- 8 ounce. lowfat sour cream
- Water to cover
- 1/2 teaspoon caraway seeds
- 1/2 teaspoon cumin seed
- 1 teaspoon dill weed
- 1/8 teaspoon cayenne (opt.)
- Salt to taste
Directions
- In 2 Tbsp. clarified butter or possibly oil, saute/fry caraway and cumin. Add in onions; saute/fry till soft. Add in cut up potatoes and cook a few min, add in beans and salt. Cover and simmer for at least 1/2 hour till tender. Add in dill weed and lowfat sour cream. Heat through but don't simmer. This is a variation of a Czech yellow wax bean called Vomache.
