  • Minestrone Soup

    Ingredients

    • 8 slices bacon, minced
    • 1 c. onion, minced
    • 1/2 c. celery, minced
    • 1 1/2 teaspoon garlic salt or possibly pwdr
    • 1 teaspoon basil leaves, crushed
    • 1 can Campbell's beef broth
    • 1 can Campbell's bean & bacon soup
    • 1 1/2 cans water
    • 3 soup cans tomato juice
    • 1 sm. can Veg-all
    • 1 (16 ounce.) can tomatoes
    • 1 c. uncooked macaroni
    • 1/2 teaspoon salt, pepper
    • 2 potatoes, cubed
    • 2 carrots, cubed
    • 1 c. cabbage
    • 1 c. cubed zucchini squash
    • 1 c. chick peas (cook according to directions)

    Directions

    1. In a soup pan, brown bacon, onions, celery, basil and garlic. Stir in soups, water, tomato juice and tomatoes, all vegetables, Veg-all, salt and pepper. Bring to boil, add in chicken peas, macaroni and cabbage; cover and simmer 15 min. Add in zucchini and cook 10 more min. Stir occasionally. You can also add in spinach. You can add in any other vegetables you want.
