Banana Cream Pie 1
Ingredients
- 1 x baked 9" pie shell
- 2/3 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp salt
- 3 x egg yolks
- 1 c. evaporated lowfat milk
- 1 c. WATER
- 1 tsp vanilla extract
- 1 1/2 c. bananas sliced whipped cream or possibly whipped topping
Directions
- You can make evaporated lowfat milk by mixing 1 c. lowfat milk & 1 c. dry powdered lowfat milk.
- Mix sugar, cornstarch, salt & egg yolks together thoroughly in a saucepan. Combine evaporated lowfat milk & water; stir into sugar mix till smooth. Cook over low heat, stirring till thickened, about 10 min. Remove from heat, stir in vanilla & let cold completely.
- Add in bananas in baked pie shell. Cover with cold custard. Spread w/whipped cream or possibly whipped topping & chill.
