    THIS RECIPE IS THE DOUBLED & BAKED VERSION OF "MEATBALLS, VEGGIE WITH GRAPE JELLY SAUCE", OVEN PREHEATED TO 350 DEGREES, BAKE FOR 45 MINUTES.

    Ingredients

    • 4 PESTO CUBES (FROM ICE CUBE TRAY FROZEN AHEAD, PUT IN PLASTIC BAG IN FREEZER) THAW IN FRY PAN WITH 1 TABLESPOON ORGANIC OLIVE OIL ADDED.
    • 6 ORGANIC GARLIC CLOVES, PRESSED
    • 1 LARGE ORGANIC ONION, MINCED
    • 8 ORGANIC EGGS, BEATEN
    • 2 CUPS COTTAGE CHEESE
    • 1 CUP ORGANIC OATMEAL
    • 1 CUP ORGANIC WALNUTS OR ORGANIC PECANS, GROUND
    • 1 CUP FLAX SEEDS, GROUND
    • 1 TEAS, IODIZED ORGANIC SEA SALT
    • 1 TEAS. ORGANIC ITALIAN SEASONING
    • 1 TEAS. VEGE BASE (BY VOGUE)
    • 1 CUP ORGANIC RICE, 1/2 WHITE & 1/2 ORGANIC BROWN RICE COMBINED
    • 1 CUP ORGANIC BREAD CRUMBS
    • TOMATO SAUCE: (SINGLE RECIPE)
    • 1/2 CONTAINER OF IMAGINE ORGANIC GARDEN TOMATO CREAMY SOUP (WHOLE 32 OZ. FOR THE DOUBLE RECIPE)
    • 1/3 OZ. WINN DIXIE CHILI SAUCE (MILD) 2/3 OZ. DOUBLE
    • 1/2 OZ. GRAPE JELLY - 1 OZ. TO DOUBLE
    • (DOUBLE SAUCE(32 OZ.) IF SERVING ALL PATTIES AT ONCE!!!

    Directions

    1. PUT 4 PESTO CUBE IN FRY PAY WITH 1 TABLESPOON OLIVE OIL, ADD MINCED ONION, AND GARLIC CLOVES, SAUTE' UNTIL SOFT.
    2. PUT 8 EGGS IN A LARGE BOWL & BEAT.
    3. ADD COTTAGE CHEESE, OATMEAL, GROUND NUTS, FLAX SEEDS, SALT, ITALIAN SEASONING, RICE AND BREAD CRUMBS AND MIX WELL.
    4. FORM INTO BALLS WITH ICE CREAM SCOOP, PUT ON WELL OILED NON STICK BAKING SHEET OR USE PARCHMENT PAPER TO AVOID STICKING.
    5. PRESS DOWN WITH SPATULA TO FORM PATTIES OR LEAVE ROUNDED.
    6. PUT PATTIES IN PREHEATED OVEN FOR 45 MINUTES.
    7. THIS MAKE 2 BATCHES OF 12 EACH & 3 EXTRA.
