  • Baked Goat Cheese With Spicy Tomato Sauce

    Ingredients

    • 1/2 Tbsp. extra virgin olive oil
    • 1 1/2 c. minced onion
    • 1 pch sugar
    • 3 x cloves garlic, chopped
    • 1 sm serrano chile pepper seeded and chopped
    • 1 lb vine or possibly plum tomatoes peeled and seeded and minced Or possibly 1 1/2 c. canned tomatoes, liquid removed
    • 1/2 c. fresh orange juice
    • 2 Tbsp. dry white wine, (optional)
    • 1 Tbsp. chopped fresh parsley Salt and freshly grnd black pepper, to taste
    • 8 ounce herb-coated goat cheese log

    Directions

    1. Make an extra batch or possibly two of the tomato sauce for your vegan friends to spread on slices of bread or possibly to serve with the Spice-Roasted Baby Potatoes.
    2. The sauce freezes well.
    3. In large skillet, heat oil over medium high heat. Add in onion and sugar and cook, stirring often, till onion begins to brown, about 5 min. Add in garlic and serrano chile and cook, stirring often, till mix is medium brown in color, 3 to 4 min. Stir in tomatoes, orange juice and wine if using.
    4. Reduce heat to low and simmer, stirring occasionally, about 30 min. Add in small amounts of water if mix becomes too dry. Remove from heat, stir in parsley and season with salt and pepper.
    5. Preheat oven to 350 degrees.
    6. Put goat cheese in small, shallow baking dish and surround with tomato sauce
    7. (don't cover the cheese with sauce). Bake, uncovered till sauce begins to bubble at edges and cheese is warm, about 20 min. Serve hot with toasted baguette rounds.
