  • Baked Chicken Breasts With Cherry Tomato Sauce

    Ingredients

    • 1 Tbsp. extra virgin olive oil
    • 1 x garlic clove chopped
    • 2 Tbsp. chopped shallot
    • 1 c. halved cherry tomatoes
    • 1/2 tsp chopped fresh oregano
    • 1/4 tsp salt
    • 1/8 tsp pepper
    • 1/8 tsp red pepper flakes
    • 2 tsp red wine vinegar

    Directions

    1. Chicken Directions: Place chicken breasts in small shallow roasting pan. Brush with extra virgin olive oil and season with salt and pepper.
    2. Roast in oven at 350 degrees till skin is crisp and chicken is thoroughly cooked, about 45 min.
    3. Meanwhile, prepare Cherry Tomato Sauce.
    4. To serve, arrange chicken on 2 plates. Top each serving with a dollop of tomato sauce.
    5. Sauce Directions: Heat extra virgin olive oil in small pan. Add in garlic and shallot and saute/fry over medium heat for 2 min. Add in tomatoes, oregano, salt, pepper and red pepper flakes. Cook over high heat, stirring frequently till tomatoes are pulpy, 5 min. Stir in vinegar.
    6. Set aside till chicken is cooked.
    7. Makes about 1 c..
    8. Note: Tomato sauce can be served warm or possibly tepid.
