  • Baked Pear Custard With Caramel Sauce

    Ingredients

    • 4 x ripe pears, peeled, quartered, and cored
    • 3/4 c. all-purpose flour
    • 3/4 c. sugar
    • 4 x Large eggs
    • 2 c. half-and-half (or possibly light cream)
    • 2 Tbsp. sugar Sauce
    • 1 c. firmly packed brown sugar
    • 1/4 c. dark corn syrup
    • 1/2 c. half-and-half (or possibly light cream)
    • 2 Tbsp. butter or possibly margarine Dash salt
    • 1/2 tsp vanilla extract

    Directions

    1. Heat oven to 375 degrees F. Grease 2 1/2-qt shallow casserole. Arrange pears in prepared casserole. Lightly spoon flour into measuring c.; level off. In large bowl, combine flour and 3/4 c. sugar. Add in Large eggs; beat well.
    2. Gradually add in 2 c. half-and-half. Pour over pears; sprinkle with 2 tbs sugar. Bake at 375 degrees F. for 40 to 50 min or possibly till knife inserted near center comes out clean. In medium saucepan, combine all sauce ingredients except vanilla. Cook over medium heat till mix boils, stirring constantly. Stir in vanilla. Serve caramel sauce over hot pear custard.
    3. Yield: 8 to 10 servings.
