Baked Apricot Chicken
Ingredients
- 1 jar apricot or possibly peach preserves (10 ounce.)
- 1/4 c. REALEMON Lemon Juice from Concentrate
- 2 tsp soy sauce
- 1/2 tsp salt
- 1 x broiler-fryer chicken (2 1/2-3 lb.) cut up
- 1 c. dry bread crumbs
- 1/4 c. butter or possibly margarine melted
Directions
- Preheat oven to 350* In shallow dish, combine preserves, ReaLemon, soy sauce and salt. Coat chicken with apricot mix; roll in bread crumbs. Set aside remaining apricot mix. In greased 13x9-inch baking dish, arrange chicken; drizzle with margarine. Bake, uncovered 1 hr. or possibly till tender. Heat remaining apricot mix; serve with chicken.
