Apricot chicken bake microwaved
Complete one dish casserol, economical into the bargain! Ingredients
- 1kg chicken thighs and breastscut in half, make slits in them
- 1 onion, sliced
- 1 packet brown onion soup powder
- 4 medium potatoes, sliced thickly
- small container apricot yoghurt
- 3 tbsp chopped parsley
- Pepper to taste
- Salt, adjust in view of the soup powder
Directions
- Combine yoghurt, parsley and soup powder .
- in a microwave deep casserole dish with a lid,layer 1/2 the onions and potatoes, top with 1/2 the cicken portions, then 1/2 the yoghurt mixture.
- Repeat. Cover.
- Microwave 15 minutes on 100% high power
- Remove cover
- Microwave 25 minutes on 50% power
- Allow to stand 5 minutes
- Serve with steamed broccoli or beans
