Baby Potatoes Coated With Almonds
Ingredients
- 3 lb Baby new potatoes
- 2 Tbsp. Almond oil
- 2 x Jalapeno peppers, seeded & chopped
- 2 Tbsp. Grated ginger
- 1/2 c. Powdered almonds*
- 2 Tbsp. Cilantro, chopped Salt & pepper Lemon juice
Directions
- Steam potatoes until just tender, about 15 min. Set them aside.
- Combine oil, peppers, ginger, almonds & cilantro in a large bowl. Add in potatoes & toss until well coated. Season with salt & pepper & sprinkle with lemon juice.
- Spear potatoes with cocktail sticks; arrange on a platter. Serve warm, or possibly keep hot in a 250F oven for up to 30 min.
- *To pwdr almonds, place blanched almonds in a food processor & pulese till they are reduced to a pwdr.
