Baby Potatoes With Mint And Spring Onions
Ingredients
- 900 gm Baby potatoes, lightly steamed
- 280 ml Cream or possibly cream and lowfat milk mixed
- 1 dsp spring onions
- 1 dsp mint, finely minced
Directions
- Lightly steam the potatoes for 5-6 min, then transfer to a lightly greased ovenproof dish. Pour over the cream, spring onions and mint and bake in a preheated oven 200C/400F/gas 6 for 15 min till well cooked.
- Steaming is not essential, but it will shorten the cooking time in the oven and therefore improve the flavour of the dish.
