Awadh Fancy Garam Masala
Ingredients
- 1 cup cumin seeds
- 2/3 cup black cardamom seeds
- 2/3 cup black peppercorn
- 1/2 cup green cardamom
- 1/3 cup coriander seeds
- 1/3 cup fennel seeds
- 1/4 cup whole cloves
- 20 cinnamon sticks 1 inch each
- 1/4 cup mace
- 1/4 cup black cumin seeds
- 2 2/3 cups bay leaves ; whole
- 1 cup rose petals ; dried
- 3 tablespoons ginger powder
- 3 nutmegs, grated
Directions
- Set aside ginger and nutmegs then process remaining ingredients in a grinder until a fine powder.
- Transfer poweder to a bowl and mix in ginger and nutmeg.
- Sieve well and store in sanitized airtight container.
