    Achari Paneer Masala - Cottage Cheese in Tangy Pickled Sauce

    Achari Paneer is not a new addition to the menu, it's quite a popular one but yea it could be found in different sections of the menu, sometimes it could be in appetizer section under the name Achari Paneer Tikka or Vegetarian Main Course - Achari Paneer Gravy or in the Vegetarian Sides - Achari Paneer Masala, but flavors are always the same - tangy, zingy and spicy.

    Ingredients

    • 250g cottage cheese (paneer), cubed
    • For the seasoning:
    • 1 tsp nigella seeds (kalonji)
    • 1 tsp cumin seeds
    • 1 tsp fennel seeds
    • ¼ tsp fenugreek seeds
    • 2 green chillies, cut lengthwise
    • Oil for cooking
    • Other ingredients:
    • 1 onion, cubed and separate the layers
    • 1 capsicum, cut into cubes
    • ¼ Cup tomato ketchup
    • 2 tbsp curd
    • 1 tsp ginger - garlic paste
    • 2 tsp red chilli powder
    • 2 tsp turmeric powder
    • 2 tsp Achar Masala (Pickle Masala)
    • 1 tsp garam masala (see recipe here)
    • Salt, as per taste
    • ¼ Cup water
    • To garnish:
    • 2 tsp kasuri methi
    • A fistful of coriander leaves, roughly chopped

    Directions

    1. Heat oil in a cooking pan over medium flame. Add fenugreek seeds, nigella seeds, cumin seeds, fennel seeds and green chillies. Sauté for a minute and wait till seeds start crackling.
    2. Add ginger-garlic paste and sauté for approx 30 seconds.
    3. Add onion and cook until onion turns translucent. Mix in capsicum and tomato ketchup.
    4. Stir in curd, turmeric, chilli powder, garam masala and salt along with water
    5. Turn the flame to low and cook for another 5 minutes or until masala thickens.
    6. Once the masala thickens mix in paneer and sprinkle achar masala. Mix nicely and let it simmer on low flame for another 3 - 4 minutes.
    7. Just before serving sprinkle kasuri methi and coriander.
    8. Serve hot with naan or roti!!!
