Autumn Apple Cake
Ingredients
- 3 cups unsifted flour
- 2 cups sugar
- 1 cup oil
- 2 eggs
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- ½ tsp. ground nutmeg
- ¼ tsp. salt
- 1 cup milk
- 3 cups chopped, peeled apples
- 1 cup raisins
- 1 cup coarsely chopped walnuts
Directions
- Preheat oven to 350F. Grease and flour a bundt pan.
- Combine first 9 ingredients in a large bowl at low speed for 2 minutes. Stir in apples, nuts and raisins.
- Pour into pan and bake for 45 minutes or until toothpick inserted in the center comes out clean.
- Cool, remove from pan and frost with cream cheese icing.
- Cream Cheese Icing
- 8 oz. cream cheese, softened
- 1 stick butter, softened
- 1 box powdered sugar
- 2 tsp. vanilla
- 1 cup chopped walnuts
- Thoroughly first 4 ingredients, then stir in nuts.
