Asparagus Tarragon Salad

- 8 ounces Fresh thin asparagus
- 4 radishes
- 2 tablespoons Tarragon (fresh)
- 1/2 fresh lemon
- one shallot
- 1 tablespoon white vinegar
- 2 tablespoons canola oil
- S & P to taste
Directions
- Blanch asparagus in boiling salted water for 3 minutes, drain, allow to cool
- Cut into pieces and add into a mixing bowl, stir gently
- Add fresh chopped finely tarragon
- slice radishes and shallot thinly
- Add remaining ingredients, toss again, cover with plastic wrap and chill for 30 minutes until ready to serve
