Asparagus Tarragon Salad

Ingredients

  • 8 ounces Fresh thin asparagus
  • 4 radishes
  • 2 tablespoons Tarragon (fresh)
  • 1/2 fresh lemon
  • one shallot
  • 1 tablespoon white vinegar
  • 2 tablespoons canola oil
  • S & P to taste

Directions

  1. Blanch asparagus in boiling salted water for 3 minutes, drain, allow to cool
  2. Cut into pieces and add into a mixing bowl, stir gently
  3. Add fresh chopped finely tarragon
  4. slice radishes and shallot thinly
  5. Add remaining ingredients, toss again, cover with plastic wrap and chill for 30 minutes until ready to serve
