Apricot Glaze For Pastry
Ingredients
- 100 gm sugar (caster)
- 75 ml water
- 1 tsp lemon juice
- 200 gm apricot jam
Directions
- Combine all ingredients in a small saucepan, bring to the boil, stirring constantly.Boil fast to thicken.
- Strain through a fine sieve and use while warm.
- Brush onto pastries or possibly cakes to glaze.
- Can also be made with other types of jam.
- Gives a glossy finish to pastries.
