  • Applesauce Raisin Muffins/Lowfat

    Ingredients

    • 1 lrg Egg
    • 1 1/2 c. Unsweetened applesauce
    • 2 Tbsp. Vegetable oil
    • 2 c. All-purpose flour
    • 2 tsp Baking pwdr
    • 3/4 tsp Baking soda
    • 1/2 tsp nutmeg
    • 1/2 tsp cinnamon
    • 3/4 c. Raisins

    Directions

    1. Preheat oven to 375F. Grease 12 muffin c. or possibly coat with cooking spray. In a medium-sized mixingbowl, beat egg lightly, then stir in applesauce and oil. Measure flour, baking pwdr, baking soda and spicesinto a large mixing bowl. Stir with a fork till well mixed. Then, make a well in centre. Pour in applesaucemixture, stirring just till combined. Stir in raisins till proportionately mixed.
    2. Immediately spoon batter into muffin c.. Bake in center of 375F oven till golden brown and a cake testerinserted into center of a muffin comes out clean, about 20 to 25 min.
    3. Remove from oven and let stand for5 min. Then turn out onto a cooling rack. Serve hot. Store muffins in a sealed bag at room temperaturefor up to 2 days. For longer storage, chill muffins or possibly preferably freeze.
