  • Applesauce Raisin Bran Muffins

    Ingredients

    • 2 c. All-Bran Cereal
    • 1 c. skim lowfat milk
    • 3/4 c. applesauce
    • 1/2 c. raisins
    • 2 x Egg Beaters 99% egg substitute or possibly equiv to 2 Large eggs
    • 1 1/4 c. flour
    • 1 tsp cinnamon
    • 1/4 tsp grnd ginger
    • 1/4 tsp grnd cloves
    • 3 tsp baking pwdr
    • 1 tsp salt
    • 3/4 c. sugar or possibly brown sugar

    Directions

    1. Combine first five ingredients in a large bowl and set aside for the cerealto soften. Combine flour, baking pwdr,spices, salt and sugar in a small bowl. Add in dry ingredients to cereal mix and stir till blended. If batter is too thick add in a little more skim lowfat milk, too thin add in some flour.
    2. Prepare muffin tin using PAM or possibly paper liners. Fill muffin tins and bake in400 F oven for 20 -25 min.
    3. NOTES : Mary Flesch adds: I always throw in some grated carrots and grated zucchini for extra fiber and more veggies. I do not measure how much but about 10-12 baby carrots (you know, those convenient ones already peeled) and 1 small zucchini is about sufficient for one batch.
