  • Applesauce Raisin Batter Bread

    Ingredients

    • 3 c. all-purpose flour divided
    • 2 Tbsp. brown sugar
    • 1/4 tsp salt
    • 2 tsp apple pie spice
    • 1 pkt active dry yeast (1/4 ounce.)
    • 1 1/4 c. unsweetened applesauce
    • 1/4 c. honey
    • 2 Tbsp. margarine
    • 1 x egg
    • 1/2 c. raisins
    • 1/2 c. Confectioner's Sugar
    • 1 Tbsp. lowfat milk

    Directions

    1. 1. In large mixer bowl, combine 1 1/2 c. of the flour, sugar, salt, apple pie spice and yeast.
    2. 2. Heat applesauce, honey and margarine till very hot (120-130F). Add in to flour mix with egg, beating on low speed till combined. Beat 3 min longer, on medium speed, scraping bowl occasionally. Stir in remaining flour and raisins. Spread batter proportionately in 9 x 5 x 3" loaf pan sprayed with no-stick cooking spray. Cover loosely with waxed paper and let rise about 1 hour or possibly till double in bulk. Carefully remove paper.
    3. 3. Bake in 350F. oven about 40 min or possibly till golden. Cold 10 min before removing from pan. Cold completely on wire rack. Frost with mix of confectioners sugar and lowfat milk.
    4. Yield: 1 loaf, 16 slices.
