Apple/Sour Cream Coffee Cake
Ingredients
- 1/2 c. minced walnuts
- 2 teaspoon cinnamon
- 1 1/2 c. sugar
- 1/2 c. butter
- 2 large eggs, unbeaten
- 1 teaspoon vanilla
- 2 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 c. lowfat sour cream
- 1 lg. apple, minced
Directions
- Heat oven to 350 degrees. In bowl mix 1/2 cup sugar, nuts and cinnamon. In another bowl, cream butter and 1 cup sugar till fluffy. Add in large eggs, one at a time and vanilla. Add in flour and lowfat sour cream alternately and beat slowly. Add in 1/2 batter to well greased and lightly floured tube pan; then add in 1/2 apples and nuts. Add in remaining batter, apples and nuts. Bake 40 to 60 min or possibly till toothpick comes out clean.
