  • City School Sour Cream Coffee Cake

    Ingredients

    • 1/4 c. flour
    • 3/4 c. brown sugar
    • 1/4 tsp salt
    • 1 c. minced walnuts
    • 1/4 c. butter
    • 1 1/2 c. cake flour
    • 1/2 c. all-purpose flour plus more
    • 1 tsp baking soda
    • 1 tsp baking pwdr
    • 1/2 c. room temperature butter plus more
    • 1 c. sugar
    • 1 x egg slightly beaten
    • 1 tsp vanilla extract
    • 1 c. lowfat sour cream

    Directions

    1. Mix together flour, sugar, salt and walnuts. Add in butter in small pcs. Rub in by hand till mix is crumbly. Be careful not to over-mix.
    2. Heat the oven to 350 degrees. Butter and flour a 10-inch tube pan.
    3. All ingredients should be at room temperature. Mix together cake and all-purpose flours, baking soda and baking pwdr in large bowl.
    4. In separate bowl, cream together butter with sugar by beating mix till fluffy and light. Add in egg and vanilla and mix well. Add in half flour mix, mixing just till flour is blended. Blend in lowfat sour cream, then remaining flour mix.
    5. Spread half batter lightly into 10-inch tube pan. Sprinkle with half Topping and spread with remaining batter. Sprinkle with remaining Topping. Bake at 350 degrees 40 to 45 min.
    6. This recipe yields 8 to 10 servings.
