Apple Mint Couscous Salad
Ingredients
- 1 Tbsp. Unsalted butter plus
- 1 tsp Unsalted butter
- 1 c. Peeled, finely-minced sweet apples
- 1 Tbsp. Chopped shallots
- 1 tsp Chopped garlic
- 3 Tbsp. Minced fresh mint Salt to taste Freshly-grnd black pepper to taste
- 1 c. Couscous
- 1 Tbsp. Extra virgin olive oil
- 1 c. Chicken stock
- 1/4 c. Toasted, shelled pumpkin seeds
- 1/4 c. Crumbled feta cheese - (2 ounce)
- 1 lrg Pita toasted, and cut in 8 triangles
- 2 x Bibb lettuce leaves
Directions
- In a large skillet, heat 1 Tbsp. of butter over high heat. Add in apples, shallots, garlic, mint, salt and pepper to taste, and saute/fry for 2 min. Add in the couscous and extra virgin olive oil and saute/fry, stirring, for 1 minute. Now stir in the chicken stock and bring to a boil, stirring for 2 min. Reduce heat to medium and cook for 1 minute. Stir in remaining butter and turn off the heat. Cover and allow to sit for 2 min. Uncover and allow to cold to room temperature.
- When cold, fluff with a fork and mix in the pumpkin seeds and feta cheese, add in salt and pepper to taste. Serve with toasted pita triangles, on a bed of crisp bibb lettuce.
- This recipe yields 3 1/2 c. of salad.
