  • Apple Cranberry Bars

    Ingredients

    • 1 c. Margarine -- softened
    • 2 c. Apples -- peeled/minced
    • 1 c. Cranberries -- minced
    • 2 x Egg whites -- whipped
    • 2 tsp Orange peel -- grated
    • 2 tsp Vanilla
    • 2 1/4 c. Unbleached flour
    • 1 1/2 c. Granulated sugar
    • 1 tsp Baking soda
    • 1/4 tsp Salt Topping----
    • 1/3 c. Margarine -- softened
    • 3 ounce Fat-free cream cheese -- Softened
    • 1 tsp Vanilla
    • 2 c. Powdered sugar --sifted
    • 1 tsp Orange peel -- grated
    • 4 tsp Skim lowfat milk -- at room Temperature

    Directions

    1. Preheat oven to 350 degrees. Prepare a 15 x 10 x 1" jelly roll pan with cooking spray and flour. In a mixing bowl, combine the margarine, apples, cranberries, egg whites, orange peel and vanilla. In another mixing bowl, combine flour, baking soda and salt. Mix dry ingredients with wet ingredients just till moistened. Spread mix into prepared pan. Bake for 30 to 35 min. Meanwhile, to prepare topping, combine the margarine, cream cheese, vanilla, orange peel, and lowfat milk. Top when bars have cooled.
