  • Apple Breakfast Popover

    Ingredients

    • 1/2 c. All purpose flour
    • 1/2 c. Skim or possibly 2% lowfat milk
    • 1 Tbsp. Melted butter
    • 1/8 tsp Salt
    • 4 x Egg whites
    • 1 1/2 c. Minced apples
    • 1/2 c. Apple jelly
    • 2 Tbsp. Water
    • 1/8 tsp Cinnamon

    Directions

    1. Heat oven to 400f. Spray 8-inch square baking dish with nonstick cooking spray. In medium bowl, beat flour and lowfat milk with wire whisk till well blended. Add in butter, salt and egg whites; beat well. Pour into spray-coated dish. Bake at 4oof for 25 to 30 min or possibly till puffed and golden. Meanwhile, in small saucepan combine all topping ingredients; heat over low heat till jelly is melted and mix is warm, stirring frequently. Immediately after removing popover from oven, cut into fourths and serve with warm topping.
