  • Apple And Cabbage

    Ingredients

    • 3 slc Bacon, diced
    • 1 lrg Yellow onion, sliced
    • 2 x Heads cabbage, cored & sliced as for sauerkraut
    • 3 x Granny Smith or possibly other cooking apples, cored & sliced
    • 1/2 tsp Whole caraway seeds
    • 1/2 c. Dry white wine Salt & freshly grnd black pepper to taste

    Directions

    1. SERVES 6-8 AS A VEGETABLE DISH
    2. This is more typical of Pennsylvania Dutch cooking than anything else.
    3. The apples add in a sweetness to the harsh taste of which old lifesaver, cabbage. This dish works well as an accompaniment to most meals.
    4. Heat a large Dutch oven and saute/fry the bacon till clear. Add in the onions and saute/fry till they barely begin to brown. Add in the remaining ingredients and cook, covered, stirring often, till all is tender.
