  • Apple And Raisin Slaw

    Ingredients

    • 5 c. coarsely minced red cabbage (abt 1/2 med head)
    • 5 c. coarsely minced green cabbage (abt 1/2 med head)
    • 1 c. coarsely grated carrots (abt 2 medium)
    • 1 lrg tart green apple, such as Granny Smith cored, and coarsely minced
    • 1/2 c. raisins
    • 1/2 c. raw unsalted sunflower seeds toasted
    • 1 1/2 c. plain nonfat yogurt
    • 1/2 c. minced fresh dill (or possibly 3 tbspns dry dillweed)
    • 2 Tbsp. vegetable oil
    • 2 Tbsp. apple cider vinegar Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Combine cabbages, carrots, apple, raisins and sunflower seeds in very large bowl.
    2. Whisk yogurt, dill, vegetable oil and vinegar in medium bowl to blend. Add in dressing to cabbage mix and toss to coat. Season to taste with salt and pepper. (Can be prepared 3 hrs ahead. Cover and chill.)
    3. This recipe yields 12 servings.
    4. Comments: An interesting and slightly sweet salad which's great with sandwiches, burgers and grilled chicken.
