  • Another Garlic Soup Recipe

    Ingredients

    • 1 c. Garlic, peeled & chopped
    • 1 Tbsp. Onion, minced
    • 2 Tbsp. Extra virgin olive oil
    • 2/3 c. Tomatoes
    • 1 quart Beef stock Pepper Croutons

    Directions

    1. Combine garlic & onion in a bowl. Heat oil in a large pot. Add in garlic & onion & saute/fry until soft. Don't brown. Add in minced tomatoes & stir in well. After a few min, stir in stock & pepper. Simmer for 15 min.
    2. Add in salt if you like.
    3. Serve with croutons.
    4. One word of advice, though...it calls for one whole c. of garlic for one qt of stock in this recipe. My wife made this recipe, and I'd
    5. *definitely* recommend using less garlic than it calls for...probably around 1/2 c. at the most. We added more tomatoes than the recipe called for.
