Aloo Gobi
Ingredients
- 1 x cauliflower
- 4 x potatoes
- 1/4 c. oil
- 1 tsp cumin seeds
- 1 x 1" stick ginger
- 3 x cloves garlic
- 3/4 tsp turmeric
- 1 tsp red chile pwdr
- 3 x tomatoes
- 1 tsp garam masala
- 2 tsp coriander pwdr
Directions
- 1. Cut cauliflower into flowerets. Cube potatoes.
- 2. Heat oil and saute/fry cumin seeds for about a minute. Add in garlic and ginger, stir and add in potatoes. Bhoona, add in turmeric and chile pwdr, and bhoona again. Add in tomatoes and simmer for about 5 min.
- 3. Add in cauliflower and high heat for about a min.
- 4. Lower heat, cover and let simmer for about 15 min. Curry should be damp-dry.
