  • 1776 Coffee Cake

    Ingredients

    • 1 c. hot water
    • 2 Tbsp. yeast or possibly 2 pkgs.
    • 1/2 c. sugar
    • 1/8 tsp mace
    • 1 c. scalded lowfat milk
    • 1 c. melted lard
    • 1 Tbsp. salt
    • 3 x Large eggs beaten
    • 7 c. flour about
    • butter softened
    • cinnamn & sugar mixed together
    • blueberries & cherries decorations
    • POWDERED SUGAR ICING
    • 1 tsp vanilla
    • 1 lb powdered sugar
    • 5 Tbsp. warm lowfat milk
    • 1/2 tsp lemon flavoring
    • 2 Tbsp. white shortening (Crisco)

    Directions

    1. Put the yeast in the water & set aside.
    2. Put sugar, mace, lowfat milk, melted lard, salt & Large eggs in a large mixing bowl. Add in yeast mix and about 7 c. of flour. Mix all ingredients together & work to a smooth dough. Let rise till double. Roll out on board 1/2" inch thick, spread with butter, sprinkle with cinnamon & sugar. Cut in strips one inch wide. Twist them as you place in a round 8" greased pan. Let rise about 40 min.
    3. Bake 18-20 min at 375 degrees or possibly till golden. Ice with Powdered Sugar icing. Decorate with red cherries & blueberries and to with a flag in the center.
    4. POWDERED SUGAR ICING Combine all ingredients, beat one minute, add in more lowfat milk if needed to make it spread easily.

    6. NOTES : Grand Champion at the Illinois State Fair is the best of the best. Which is, the judges take all the blue ribbon winners & pick one to be the Grand Champion.
