  • Zucchini Walnut Bread

    Ingredients

    • 1 cup all purpose flour
    • 1 tsp baking sode
    • 1/2 tsp baking powder
    • 1/2 tsp salt
    • 1/2 tsp cinnamon
    • 1/2 cup veg oil
    • 3/4 cups sugar
    • 2 eggs, room temp
    • 1/2 ts vanilla extract
    • 1 cup shredded zucchini, including skin
    • 1/4 cup chopped nuts

    Directions

    1. preheat oven to 350
    2. grease and flour a 9x5x3 inch loaf pan
    3. In a small bowl conmbine the flour, baking soda, baking powder, salt and cinnamon, set aside
    4. in a large bowl on the medium speed of a mixer beat together,the oil, sugar, eggs and vanilla until light about 3 minutes, stir in zucchini, add the dry ingredients and mix until just combined, stir in the nuts.
    5. pour the batter into the prepared pan. place on a baking sheet and bake for 50-60 minutes,m or until a tester comes out with moist crumbs attached. let cool for at least 1 hour before serving
