    I just made this bread and it turned out so good i have to say I'm not sure if i got this recipe on this site or not so if i did then i want to thank you for sharing it is a moist and dense bread great texture and the flavor of the orange zest gives it a very nice flavor with out being over powering a couple of things i do want to mention is the recipe says to cook for 45to55 min mine was done at 45min also it says to cool for 10 min before taking out of the pans i found that it came out better if i waited 15 to 30 min that is the only thing i didn't like about this however the taste of the bread made it worth waiting to take out of the pans the next time i make this i think i will try making muffins hope you enjoy this bread as much as i am wright now also i didn't make the glaze because it was sweet enough for me i used yellow zucchini but i don't think it matters which one a person use's hope this was helpful

    Ingredients

    • 4 eggs
    • 1 1/2 cups sugar
    • 3/4 cup oil
    • 2/3 cup orange juice
    • 2 cups shredded unpeeled zucchini
    • 3 1/4 cups flour
    • 1 1/2 teaspoons baking powder
    • 1 1/2 teaspoons baking soda
    • 1 teaspoons salt
    • 2 teaspoons grated orange rind
    • 2 1/2 teaspoons cinnamon
    • 1/2 teaspoon clove

    Directions

    1. Grease and flour bottems only of two 8x4 or 9x5 loaf pans in a large bowl beat eggs until thick and lemon coloured gradually beat in sugar add oil, orange juice and zucchini orange rind then stir in remaining dry ingredients mix well pour into prepared pans bake at 350 degree oven for 45 to 55 min depending on your oven
    2. Glaze 1 cup powdered sugar and 2-3 Tablespoons orange juice
