Zucchini Soup
A Ukrainian recipe given to me by my good friend Dzvinka. This soup quickly became a household favorite. Served with a dollop of sour cream on top! Ingredients
- 1 large Onion
- 5-6 small Zucchini squash (about 5-6 cups)
- 8 cups stock
- 2-3 large cloves Garlic
- 3/4 cup Oats
- 1 Bay leaf
- Fresh Crushed Peppercorn
- Salt to taste
- Optional
- 1 t Sour Cream
- 1/2 cup Beans-Chick Peas
- 1 cup Mushrooms - whole or pureed
- 8 oz. Meat (s)
Directions
- Grate or finely chop the onion and put into a stock pot on med high heat
- Grate the Zucchini and add to the cooking onion
- Simmer for 10-15 min allowing the ingredients to get soft
- Add the Stock, Garlic, Bay leaf and Pepper
- Allow this to come to a slow rolling boil.
- Add the Oats and reduce the heat.
- Simmer for about 10 minutes
