  • Zucchini Soup

    A Ukrainian recipe given to me by my good friend Dzvinka. This soup quickly became a household favorite. Served with a dollop of sour cream on top!

    Ingredients

    • 1 large Onion
    • 5-6 small Zucchini squash (about 5-6 cups)
    • 8 cups stock
    • 2-3 large cloves Garlic
    • 3/4 cup Oats
    • 1 Bay leaf
    • Fresh Crushed Peppercorn
    • Salt to taste
    • Optional
    • 1 t Sour Cream
    • 1/2 cup Beans-Chick Peas
    • 1 cup Mushrooms - whole or pureed
    • 8 oz. Meat (s)

    Directions

    1. Grate or finely chop the onion and put into a stock pot on med high heat
    2. Grate the Zucchini and add to the cooking onion
    3. Simmer for 10-15 min allowing the ingredients to get soft
    4. Add the Stock, Garlic, Bay leaf and Pepper
    5. Allow this to come to a slow rolling boil.
    6. Add the Oats and reduce the heat.
    7. Simmer for about 10 minutes
    8. Smachnoho!
