Curried Apple And Zucchini Soup
Ingredients
- 2 Tbsp. margarine or possibly butter
- 1 lrg onion
- 1 x apple peeled, cored, and minced
- 1 tsp curry pwdr - (to 2)
- 4 c. chicken stock
- 1/4 c. uncooked rice
- 2 c. diced unpeeled zucchini - (abt 1/2 lb)
- 1/2 tsp salt
- 1 c. lowfat milk
Directions
- In saucepan, heat butter; saute/fry onion and apple till soft. Sprinkle with curry pwdr. Cook, stirring for a few seconds.
- Pour in chicken stock; bring to boil, add in rice, zucchini and salt. Cover and cook till rice and zucchini are tender, about 30 min.
- Pour in blender and blend till smooth, return to pan and add in lowfat milk, heat through. Serve warm.
