I wanted to share a little tip with you today. I don't fry foods very often, but I save the oil in a jar in the refrigerator when I do. Here's the sneaky part. I use it in my homemade bread. In a mixer fitted with a dough hook place the 1/4 cup water. Sprinkle the yeast over it and 1 tablespoon of the sugar. Let sit for 5 minutes. Add the rest of the water, brown sugar, oil and the whole wheat flour. Mix for 2 minutes, adding the salt and some of the white flour to make a smooth batter. Add the rest of the flour or enough to make a dough that just pulls away from the sides of the mixer. Knead in the mixer for 8 minutes. Place in a large well oiled bowl and set in a warm place (covered with a towel) until doubled in size. I put mine on the stove with the oven on warm.
On an oiled surface roll dough into two loaves and place in loaf pans sprayed with Pam. Let rise covered with a towel for 30 minutes. Bake at 350 degrees for 30 minutes. Remove to racks to cool.
