    Ingredients

    • 47 doz eggs
    • 50 cups milk
    • 6 pounds cream cheese, softened
    • 6 pounds Jack cheese, shredded
    • 6 pounds cheddar cheese, shredded
    • 6 pounds swiss cheese, shredded
    • 1.5 lbs Butter
    • 1 cups salt
    • 1 cups pepper

    Directions

    1. Beat together eggs, milk, salt and pepper.
    2. Stir in cheese.
    3. Heat medium non-stick skillet over medium-high heat.
    4. Add butter and green onion or fresh chives. Sauté a few seconds.
    5. Pour in egg mixture and immediately reduce heat to medium-low.
    6. As mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft curds.
    7. Cook until eggs are thickened and no visible liquid egg remains, but they are still moist.
