400-3/4 c Ingredients
- 47 doz eggs
- 50 cups milk
- 6 pounds cream cheese, softened
- 6 pounds Jack cheese, shredded
- 6 pounds cheddar cheese, shredded
- 6 pounds swiss cheese, shredded
- 1.5 lbs Butter
- 1 cups salt
- 1 cups pepper
Directions
- Beat together eggs, milk, salt and pepper.
- Stir in cheese.
- Heat medium non-stick skillet over medium-high heat.
- Add butter and green onion or fresh chives. Sauté a few seconds.
- Pour in egg mixture and immediately reduce heat to medium-low.
- As mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft curds.
- Cook until eggs are thickened and no visible liquid egg remains, but they are still moist.
