Winter Kale and Apple salad with Freekeh
This hearty salad is full of protein and fiber. Ingredients
- 12 oz chopped Kale
- 1 Carrot, shredded
- 1 Apple, chopped
- 1/2 cup cooked Freekeh or Quinoa
- 1/4 cup dried cranberries
- Juice of 1 lemon
- 1/4 cup Balsamic vinegar
- 1 tbs. Molasses
- 1 tbs. Grapeseed oil
Directions
- In a large bowl add kale, carrot, apple, steamed freekeh and cranberries.
- In a small bowl add lemon juice, balsamic vinegar, molasses and grapeseed oil, then whisk together with a wire whisk
- Pour mixture over salad and toss.
