  • Whole Wheat Banana Nut Bread

    Ingredients

    • 1/4 c. plus 2 tbsp. butter, softened
    • 3/4 c. firmly packed dark brown sugar
    • 2 Large eggs
    • 1 1/2 c. whole wheat flour
    • 3/4 c. all-purpose flour
    • 2 teaspoon baking pwdr
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 3 tbsp. buttermilk
    • 2 c. mashed ripe banana
    • 1 c. minced pecans

    Directions

    1. Cream butter; gradually add in sugar, beating well. Add in Large eggs, one at a time, beating well after each addition.
    2. Combine flour, baking pwdr, soda, and salt; add in to creamed mix alternately with buttermilk, beginning and ending with flour mix. Stir in banana and pecans.
    3. Spoon batter into a greased and floured 9x5x3-inch loaf pan. Bake at 350 degrees for 1 hour and 10 min or possibly till a wooden pick inserted in center comes out clean. Cold in pan 5 min; remove to wire rack and cold completely. Yield: 1 loaf.
