  • Weight Watchers Lemon Cheese Bars Microwave

    Ingredients

    • 1/2 c. reduced-calorie tub butter
    • 1/4 c. + 2 tbsp. brown sugar, firmly packed
    • 1 1/2 c. all-purpose flour
    • 3 ounce. quick oats
    • 10 ounce. reduced calorie cream cheese
    • 1/4 c. skim buttermilk
    • 1 lg. egg
    • 2 tbsp. lemon juice
    • 2 tbsp. shredded coconut, toasted

    Directions

    1. 1. To prepare crust, in medium bowl, combine butter and 1/4 c. of the sugar. With mixer on low speed, beat till creamy. Add in flour and oats; beat till blended.
    2. 2. Press mix into bottom of an 8 inch square pan. Microwave on medium for 4-6 min, turning pan once, till dry around edges; set aside.
    3. 3. Place cream cheese in small bowl. Microwave on medium for 40 seconds, till softened. Stir in lowfat milk, egg, and lemon juice; mix well. Spread over crust. Place remaining sugar in small sieve; tapping sieve gently, sprinkle sugar proportionately over filling. Sprinkle with coconut. Microwave on high 6-10 min, turning dish once, till hard in center.
    4. 4. Cold completely on rack. Chill at least 2 hrs before cutting into 12 equal bars.
    5. Each serving is 205 calories.
