Watercress & Carrot Salad
Even though I called this recipe “salad”, we eat this with rice as a side dish. But it can be eaten as a standalone salad with salad dressing but the watercress does not need to be chopped very small. Ingredients
- 1 cup chopped watercress
- 1 small carrot shredded
- 2 tablespoons chopped red onion
- 1 tablespoon lemon juice or more according to taste
- salt and pepper to taste
Directions
- Mix chopped watercress and shredded carrot and chopped onion
- add salt, pepper and lemon juice
- Mix well and serve with rice as a side accompaniment
