Picante Carrot Salad
Great side dish to serve, with Meat, Chicken or Fish. Ingredients
- 10-13 Large carrots, peeled
- 1 Garlic head, peeled, and sliced thin
- 1 large bunch of cilantro, chopped fine
- 1/4 cup olive oil
- 1/2 Jalepeno pepper, remove seeds, and chopped fine
- 2 teas. Cumin, or more, to taste
- Salt, pepper, to taste
- Fresh Lemon Juice, to taste
Directions
- Peel the carrots, and cut the ends. Place in pot, and cook approximately 25 minutes, until medium soft. You dont want the carrots to get too soft. Remove from pot, and cool. Slice carrots in medium size slices, and put in bowl. Add remaining ingredients. Season to taste.
